This is a vegan cake which is also sugar free and I make it with gluten-free flour and then everyone can enjoy!!
Ingredients:
- 1 cup pumpkin, steamed
- 4 over-ripe bananas
- 1 cup Macadamias, chopped into pieces (any nuts can be substituted)
- 1/4 cup raisins
- 1 1/2 - 2 cups Self-raising gluten free flour
- 1 teaspoon mixed spice
- 2 Tablespoons fresh ginger, diced
- 2 Tablespoons Molasses
- 1/2 cup soy or almond milk
Method:
- Steam the pumpkin and then mash together with the bananas.
- Mix in the macadamias, raisins, mixed spice, ginger and flour.
- Heat the molasses and soy milk in a small saucepan and then add to the cake mix.
- Add extra flour, if required, to achieve a cake consistency.
- Pour into a lined loaf tin.
- Bake a 180 degrees for 1 - 1 1/4 hours.
