Vegan Banana Pumpkin Cake (WF, GF, DF, EF)

This is a vegan cake which is also sugar free and I make it with gluten-free flour and then everyone can enjoy!!

Ingredients:

  • 1 cup pumpkin, steamed
  • 4 over-ripe bananas
  • 1 cup Macadamias, chopped into pieces (any nuts can be substituted)
  • 1/4 cup raisins
  • 1 1/2 - 2 cups Self-raising gluten free flour
  • 1 teaspoon mixed spice
  • 2 Tablespoons fresh ginger, diced
  • 2 Tablespoons Molasses
  • 1/2 cup soy or almond milk

Method:

  1. Steam the pumpkin and then mash together with the bananas.
  2. Mix in the macadamias, raisins, mixed spice, ginger and flour.
  3. Heat the molasses and soy milk in a small saucepan and then add to the cake mix.
  4. Add extra flour, if required, to achieve a cake consistency.
  5. Pour into a lined loaf tin.
  6. Bake a 180 degrees for 1 - 1 1/4 hours.
