Date, Sweet Potato and Coconut Halva (WF, GF)


  • 10 dates
  • 15 cashew nuts
  • 150g or 2 medium sweet potatoes
  • 1 cup grated coconut
  • 1/2 cup sugar
  • 4 tablespoons ghee (solid)


  1. Grate sweet potato and chop dates into small pieces.
  2. In a saucepan, heat ghee, add grated coconut and sugar and cook, on low heat, until sugar melts.
  3. Add grated sweet potato and cook on low heat until it chages colour.  Add dates and cashews and mix well.
  4. Serve in small bowls with a sprinkle of toasted shredded coconut on top.
