Everyone loves gingerbread. This is a gluten and dairy free version of the traditional recipe. Ginger is excellent for settling an upset tummy and improving circulation.
Ingredients:
- 125g butter (or dairy-free alternative)
- ½ cup sugar
- 1 egg yolk
- 2 tablespoons golden syrup
- 2 cups gluten free plain flour
- 1 teaspoon cinnamon
- 2 teaspoons ground ginger
- 1 teaspoon gluten free bi-carb soda
- Nuts and seeds for decoration
Method:
- Preheat oven to 180C and grease two baking trays.
- In a mixer cream the butter and sugar until smooth, add egg yolk and syrup and beat again.
- Add dry ingredients and mix together.
- Knead dough and roll out, cut into shapes and decorate with nuts and seeds.
- Bake for about 15 minutes or until golden brown.
