A quick and easy loaf to satisfy the taste buds of non-vegan's and vegan's alike.
Ingredients:
- 1 1/2 cups Gluten free Self-raising Flour
- 1 cup chopped Dates
- 100g Pecans, coarsely chopped
- 1 cup soymilk
- 2 Tablespoons Golden syrup or molasses
- 1 teaspoon bicarb soda
Method:
- Preheat oven to 180°C.
- Grease or line a loaf pan.
- Place flour, bi-carb soda, dates and pecans in a bowl and mix well.
- Heat milk and golden syrup in a saucepan, stir until combined and bring to the boil, mixture may appear curdled.
- Pour hot milk mixture into flour mixture and stir well. Spoon mixture into prepared loaf pan.
- Bake in oven for about 30-45 minutes or until cooked when tested.
Serve warm or cold in slices.
