Vegan Date and Pecan Loaf (WF, GF, DF, EF)

A quick and easy loaf to satisfy the taste buds of non-vegan's and vegan's alike.

Ingredients:

  • 1 1/2 cups Gluten free Self-raising Flour
  • 1 cup chopped Dates
  • 100g Pecans, coarsely chopped
  • 1 cup soymilk
  • 2 Tablespoons Golden syrup or molasses
  • 1 teaspoon bicarb soda

Method:

    1. Preheat oven to 180°C.
    2. Grease or line a loaf pan.
    3. Place flour, bi-carb soda, dates and pecans in a bowl and mix well.
    4. Heat milk and golden syrup in a saucepan, stir until combined and bring to the boil, mixture may appear curdled.
    5. Pour hot milk mixture into flour mixture and stir well.  Spoon mixture into prepared loaf pan.
    6. Bake in oven for about 30-45 minutes or until cooked when tested.

 Serve warm or cold in slices.
