Flourless Choc-nut-banana Biscuits (WF, GF, DF)

These soft, delicious biscuits are flour-free, contain no added sugar and contain lots of nutritious ingredients.  You can mix and match the nuts and seeds to your taste.  Dried fruits can be substituted for the chocolate if you wish.

Ingredients:

  • 1/2 cup mixed seeds (eg. pumpkin seeds, sunflower seeds)
  • 1/2 cup mixed nuts (eg. almonds, cashews)
  • 1/2 cup dairy-free dark chocolate (or carob), chopped finely
  • 2 bananas, sliced
  • 1/4 cup maple syrup
  • 2 tablespoons rice bran oil
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking soda
  • 1 teaspoon cinnamon
  • pinch sea salt
  • 1/4 cup flaxmeal
  • 1 teaspoon apple cider vinegar

Method:

  1. Preheat oven to 200°C. Grease two biscuit trays.
  2. Add the seeds to a food processor and blend until a course meal.  Remove to a large bowl.
  3. Add the nuts to a food processor and blend until nuts are in small pieces.  Add to seeds, with chocolate pieces.
  4. Add banana, maple syrup, oil, vanilla extract, baking soda, cinnamon and flaxmeal to the food processor. Pour vinegar in while processing for about 20 seconds or until mixture is smooth with small chunks of banana still visible. Add to bowl with other ingredients.
  5. Spoon onto baking trays in dessertspoon fulls, allowing room for mixture to spread.
  6. Bake for 10-15 minutes or until golden brown around base of biscuit.  Cool on tray for a few minutes and transfer to rack.
