Eggless Fruit Loaf (GF, WF, DF, EF)

 Ingredients:

  • 1 ½ cups self-raising gluten-free flour
  • 1 cup sultanas
  • 100g walnuts, coarsely chopped
  • 1 cup milk/soy milk
  • 1 cup golden syrup
  • 1 teaspoon bicarb soda

 Method:

  1. Preheat oven to 180°C.
  2. Grease a 12cm x 22cm loaf pan. Line base & sides with baking paper, extending paper 2cm above edges of pan.
  3. Place flour, sultanas and walnuts in a large bowl and mix well.
  4. Pour milk and golden syrup into a saucepan and heat, stirring until combined and bring to the boil.  Mixture will appear curdled.  Add bicarb soda and mix well.
  5. Pour hot milk mixture into flour mixture and mix well.  Spoon mixture into prepared pan.
  6. Bake in oven for about 45 minutes or until cooked when tested.

 Serve warm or cold in slices.
