Ingredients:
- 1 ½ cups self-raising gluten-free flour
- 1 cup sultanas
- 100g walnuts, coarsely chopped
- 1 cup milk/soy milk
- 1 cup golden syrup
- 1 teaspoon bicarb soda
Method:
- Preheat oven to 180°C.
- Grease a 12cm x 22cm loaf pan. Line base & sides with baking paper, extending paper 2cm above edges of pan.
- Place flour, sultanas and walnuts in a large bowl and mix well.
- Pour milk and golden syrup into a saucepan and heat, stirring until combined and bring to the boil. Mixture will appear curdled. Add bicarb soda and mix well.
- Pour hot milk mixture into flour mixture and mix well. Spoon mixture into prepared pan.
- Bake in oven for about 45 minutes or until cooked when tested.
Serve warm or cold in slices.
