So deliciously decadent that you only need a tiny slice to satisfy even the most naughty cravings.
Ingredients:
Base:
- 180g Macadamia nuts
- 16 Medjool Dates (pitted)
- 2 Tablespoons Raw Honey
- 1 Tablespoon Raw Cacao powder
Topping:
- 1/4 cup coconut oil
- 1/4 cup Raw Cacao powder
- 2 Tablespoons Rice Malt Syrup, Honey or Molasses
- 1/4 teaspoon Vanilla essence
Note: I left out the honey and rice malt syrup in both the base and topping since I prefer desserts & slices to be less sweet.
Method:
Base: Blend all ingredients in a food processor, its even more interesting if there are a few chunks of macadamia left, just not too big. Press into a lined loaf tin and freeze for 20 minutes.
Topping: Melt coconut oil in a bowl on top of a saucepan of water (except in hot summers when the coconut oil melts in the jar). Once melted, add remaining ingredients and mix well. Pour over the base layer and sprinkle with cocoa nibs or roughly grated dark chocolate.
Freeze for 1-2 hours then cut into small pieces and keep in the freezer. Thaw for 5 minutes before serving.
