- 2 cups grated carrots
- 1 cup pitted dates
- 1/2 cup rolled oats
- 1/2 cup walnuts or macadamias
- 1 Tablespoon Coconut Oil
- 1/4 cup shredded coconut
- 1 teaspoon cinnamon powder
- 2 teaspoons vanilla extract
- 1/2 teaspoon nutmeg
- Enough desiccated coconut to roll balls
- Put all ingredients in food processor and blend until fairly smooth.
- Roll into balls, then roll in desiccated coconut to coat the outsides.
- Place in fridge or freezer if you like them cold!
