Flourless Chocolate Chia seed Cake (WF, GF, DF)

This is great for the gluten/wheat sensitive guest as it contains no flour at all.


  • 4 Tbsp Chia seeds (soaked in 1 cup water for 15 minutes)
  • 1 cup Almond meal (or 1 cup pepita meal for a nut free recipe)
  • 1/4 cup raw sugar
  • 1/2 cup cocoa (raw or dutch processed)
  • 2 tsp cinnamon powder
  • 1 tsp nutmeg powder
  • 125g Butter (or 1/4 cup olive oil or coconut oil)
  • 4 medium eggs
  • 1 tsp bicarbonate of soda


  1. Preheat oven to 180 degree C
  2. Line a cake tin with non-stick baking paper
  3. Soak the chia seed in 1 cup of water for 15 minutes, stirring regularly 
  4. Place cocoa, almond meal, sugar, bicarb, eggs and butter in a bowl 
  5. Beat to combine well and break up any lumps
  6. Add chia seed jelly and whisk well
  7. Pour into lined cake tin
  8. Bake in oven for 35-40 minutes or until it bounces back when pressed in the middle.
  9. Finish cooling on a wire rack
